Hoi Sin Turkey with Noodles

Serves 2
Syn Free on Extra Easy

300g lean turkey meat, diced
2 onions, sliced
150g baby sweetcorn, halved lengthways
4 baby courgettes, quartered
150g noodles, cooked
4 tbsp hoi sin sauce
4 tbsp soy sauce

Stir fry the turkey and onions in Fry Light for ca five minutes, then add the sweetcorn and courgettes. Continue cooking until the turkey is cooked through and the vegetables are done to your liking. Add the hoi sin and soy sauce, and the noodles and cook, stirring, until everything is well mixed and heated through.

Steamed Pork Cups




This is my adaptation of a Thai recipe – substituting coconut flavoured yogurt for coconut milk and sweetener for palm sugar to make the recipe more Slimming World friendly. I used a chilli from my Aji Hot plant for this, and was disappointed by how mild it was, so next time I will increase the quantity.



Serves 2
Syn Free on Extra Easy

250g extra lean minced pork
½ tub Müllerlight coconut and vanilla yogurt
4 spring onions, chopped
juice of half a lime
1 tsp sweetener
1 chilli, chopped
handful coriander leaves, chopped
1 egg
stir fried vegetables to serve



Blend or process the pork, yogurt, spring onions, lime juice, sweetener, chilli and coriander leaves until combined. Transfer the mixture to a bowl. In another bowl, beat the egg until thick and creamy and fold into the pork mixture. 

 

Spoon the mixture into 4-6 small cups – I found the Chinese tea cups perfect size for this, but egg cups would be a good alternative. Steam the cups in a bamboo or electric steamer for 20 minutes until cooked through. Serve with stir fried vegetables of your choice – I used a packet of ready cup vegetables as I knew I was going out for the day and wouldn't have much time when I got back.

Pork Fried Rice


You can of course use just normal, plain pork steaks for this dish. Or coat them with your favourite spice mix before grilling. I just find Joe's meats to be such an easy option when I'm busy.

This was my very first Ajo Hot chilli harvest, and I was disappointed. There was very little heat to it, although it had a nice fruity taste. 

 

Serves 2
Syn Free on Extra Easy

1 pkt Joe's Chinese Pork Steaks
1 cup rice
2 tsp bouillon powder
1 onion, chopped
handful green beans, chopped
1 pkt beansprouts
100g spinach
1 tbsp dark soy sauce
1 tsp sweetener
2 tsp rice wine vinegar
1 red chilli, finely chopped



Grill the pork steaks until cooked through and slice very finely. Boil the rice in plenty of water with the bouillon. Drain. Sauté the onion and beans in Fry Light until soft. Add the beansprouts , spinach, soy sauce, vinegar, sweetener, rice and chilli. Stir over a low heat until the spinach has wilted and the beansprouts are beginning to get soft. Serve with extra soy soy if you like. 

 

Lemon Pepper Chicken


You can use almost any vegetables to stir fry here, I used bok choy, onions and green beans as that's what I had in my fridge. The chicken is very peppery and quite tangy!



Serves 2
Syn Free on Extra Easy

2 chicken breasts
1 tbsp black peppercorns
1 tsp cumin seeds
1 tsp paprika
1 tsp dried thyme
1 tsp celery powder
½ tsp salt
2 lemons
stir fry vegetables to serve



Remove the skin and any visible fat from the chicken breasts. Cut into small mini fillets and place in a bowl. Finely grate the zest from both lemons. Coarsely grind the herbs and spices in a spice grinder, and add the lemon zest. Pulse a few more times to mix well. Add the spice mix to the chicken fillets in the bowl, with the juice of one of the lemons. Mix well to ensure the fillets are evenly coated. Grill until cooked through and beginning to brown. Serve with stir fried vegetables of your choice and the other lemon cut in two to squeeze over if desired.

Lime Prawn Stir Fry




Serves 2
Syn Free on Extra Easy

300g cooked king prawns
1 small courgette, sliced
5-6 baby sweetcorn, sliced
1 small carrot, sliced
4-5 asparagus, sliced
1 onion, chopped
pkt rocket, watercress and spinach
1 tbsp soy sauce
juice of 2 limes
1 small chilli, chopped
1 tbsp sweetener



Sauté the onion in Fry Light for a few minutes, then add the carrot, asparagus, babycorn and courgette. Continue stir frying for a few more minutes, then add the soy sauce, lime juice, chilli and sweetener. Stir well, then add the rocket, watercress and spinach. Stir until the salad vegetables are just beginning to wilt. Serve immediately.

Char Siu (Chinese BBQ Pork)




Traditionally you would use a large piece of pork such a belly and cook this slowly in the oven to make it really sticky. This is a much simplified version using thin pork escalopes and sweetener rather than sugar, and is ready in a flash.



Serves 2
1 ½ Syns on Extra Easy

2 pork escalopes
½ tsp five spice powder
2 tbsp sweetener
2 tbsp Chinese cooking wine
1 tbsp Hoi Sin sauce
1 tbsp sweet chilli sauce
1 tbsp dark soy sauce
pkt stir fried vegetables to serve



Mix together all the ingredients except the pork and the vegetables. Marinate the pork steaks for 3 hour or more. Drain the meat (reserve the marinade) and grill (or BBQ) on a very high heat for a few minutes each side until cooked through and nicely brown and sticky. Stir fry the vegetables, adding the reserved marinade. As the sauce has been in contact with raw meat, ensure it is cooked properly before serving.

Hoi Sin Duck with Fried Red Rice




Serves 2
3½ Syns on Extra Easy

2 duck breasts, skin and fat removed and thinly sliced
1 tbsp plum sauce
1 tbsp dark soy sauce
1 red onion, chopped
½ pkt baby sweetcorn, chopped
½ pkt bean sprouts, cooked
½ orange pepper, chopped
4 white asparagus, sliced
½ courgette, sliced
4 shallots, sliced
handful cooked peas
2 sticks lemongrass, minced
knob ginger, minced
2 cloves garlic, minced
4 tbsp hoi sin sauce
extra soy sauce, optional
couple of handfuls cooked red rice



Marinate the duck in the plum and soy sauces for at least 30 minutes. Stir fry in a little Fry Light with the onion, shallots, ginger and pepper for a few minutes until the duck is cooked. Add the other vegetables with the lemongrass, ginger and garlic. Stir for a few more minutes, making sure it doesn't stick to the bottom of the pan. Add the hoi sin sauce, rice and extra soy sauce if using. Stir until it is heated through.

Turkey and Noodle Stir Fry


I have to say I was surprised at how the nice, bright orange pepper turned rather yellow when cooked. Humph! 

 

Serves 2
Syn Free on Extra Easy

2 turkey steaks, thinly sliced
1 orange pepper, thinly sliced
1 red onion, thinly sliced
½pkt baby sweetcorn, chopped in half and sliced lengthways
½ pkt beansprouts
2 blocks dried egg noodles, cooked
½ pkt spinach
2 sticks lemongrass, finely chopped
knob of ginger, minced
light soy sauce
1-2 chillies, chopped
sweetener to taste



Heat a little Fry Light in a large pan and sauté the turkey and onions over a high heat for a couple of minutes. Add the pepper and sweetcorn. Stir for a minute and add the ginger and lemongrass, soy sauce and sweetener. Stir well. Add the cooked noodles, spinach and beansprouts and cook until the spinach and beansprouts have wilted slightly.
