Cinnamon Rock Cakes


This is NOT a Slimming World recipe and I don't even want to know how many syns are in each one. They are too nice to not include on this site tough, and Husband loves me to make them from time to time. As I do of course, the dutiful wife that I am. *cough*



Makes about 8 cakes.

225g self raising flour
113g demerera sugar
113g margarine
113g sultanas
1 egg
plash of milk
2 tsp ground mixed spice
1 tsp cinnamon

Sift the flour into a large bowl, add cinnamon and mixed spice and mix thoroughly. Add margarine and mix to resemble fine breadcrumbs – easiest done by pulsing the mixture in a food processor. Add the sugar and sultanas and mix well. Pour a beaten egg into the mixture until it comes together to a sticky dough ball. Add a small splash of milk if necessary. Place the mixture in generous lumps (no need to form properly, they are best left lumpy). Bake for 10-20 minutes at 175°C until golden brown and a skewer inserted into the centre comes out clean.
