Pickled Garlic








I made these ages ago, and re-discovered them recently. They are certainly done now, and are great for livening up dull dishes. 

 

I used a couple of garlic bulbs to fill a small jar. Peel the garlic and place in the jar along with a few leaves of fresh tarragon. Boil up pickling vinegar with some spices if you're that way inclined (I used whole cumin, yellow and black mustard seeds, black peppercorns, whole cardamom, coriander seeds, and onion seeds) and pour over the garlic. Leave in a dark place for several weeks before using.
