Caramelised Pineapple with Vanilla Coconut Sauce




I know the Slimming World plan states that you have to calculate the syn value for 'cooked' fruit; but as the pineapple is in and out of the pan in a flash, without changing the structure of the fruit in any way, I personally do not think it warrants being synned, but you have to take that into consideration when preparing this recipe.



Serves 2
½ syn on Extra Easy *see notes above

½ fresh pineapple
sweetener
cinnamon
1 tub Müllerlight Coconut and Vanilla Yogurt
chopped jelly to serve (optional)



Spray a non-stick frying pan with Fry Light and heat to very hot. Peel, core and slice the pineapple, and sprinkle with sweetener and cinnamon. Place sprinkled side down in the frying pan, sprinkle the upper side with sweetener and cinnamon and immediately turn over. Fry for 15-20 second on the second side and remove from the heat. Serve immediately with yogurt.
