Spiced Marmite Chicken


I love Marmite and thought I'd give it a go as a coating for grilled chicken. I saw a recipe for something similar, but decided to create my own spice mix. You can add all sorts of different spices to this as you please, but as we were having my dad over tonight, it couldn't be anything spicy. 

 

Serves 4
Syn Free on Extra Easy

4 chicken breasts
2 tbsp Marmite
½ tsp celery salt
½ tsp garlic powder
½ tsp onion seeds
½ tsp ground nutmeg
½ tsp ground ginger
½ tsp white pepper
½ tsp dry mustard powder
1 tsp smoked paprika
1 tsp marjoram
1 tsp ground cumin
2 tsp paprika
2 tsp bouillon powder



Coat the chicken breasts with the Marmite. The easiest way of doing this with your hands in a large bowl, rubbing it in. You will get very mucky, but it ensures a much more even coating than if you try to do it with a knife or spoon.

Mix together all the spices . Place the now-coated chicken breasts side by side on a plate and sprinkle the spice mix over, using your hands again to pat them down to ensure they stick to the chicken. Turn the chicken breasts over and repeat on the other side. Bake in the oven for 20-30 minutes at 220°C until the meat is cooked through. The spices and Marmite give it a nice crunchy coating and seems to help keep the meat moist and tender. 

 

Serve with vegetables of your choice – we had celeriac chips, cabbage and leeks in white sauce.
