Breakfast Hash with Beef
I
find breakfast hash to be a great way of using up several leftovers,
and it's such a nice way to start a leisurely Sunday morning.
Today's
hash consisted of leftover roast potatoes and parsnips; a couple of
beef kebabs with red onion, green pepper and onion; a couple of
grilled tomatoes; and some roasted red onion. All of it chopped up
finely and quickly fried in some Fry Light, just to heat it all up
again. Top with a fried egg, and voilà: you have a tasty and filling
brunch in no time!
