King Prawn Salad
This
salad is so easy and quick to make, but never fails to satisfy. You
can vary the amount of chilli to suit your taste.

1
packet of king prawns
1
packet salad leaves – I like to use watercress, rocket and spinach
2-3
limes
1-2
tsp sweetener
1
red chilli, finely chopped
Divide
the salad between two plates and top with the prawns. I like to take
it all out of the fridge at least an hour before serving, as I don't
like my food cold (that even includes ice cream!).
Mix
the juice from the limes, sweetener and chopped chilli together –
or cheat as I do and use sambal oelek (or lazy chilli in a jar) in
place of the chilli. Drizzle over the dressing and serve.
