Celeriac and Apple Slaw


This makes a very pleasant change from the more traditional coleslaw and has a mild celery taste. It goes very well with grilled steaks or lamb. 

 

Serves 4-6
2 syns for the whole bowl

½ celeriac
1-2 carrots
1 apple
1 onion
4 tbsp extra light mayonnaise
4 tbsp fat free plain yogurt
a few drops of lemon juice

Peel the celeriac and carrots and cut into julienne strips using a mandolin. Place them immediately in a bow of cold water with the lemon juice added. Using the same mandolin, cut the apple into julienne strips with the skin still on. Add to the bowl with the water and vegetables. Peel the onion and cut with the mandolin as before.

Mix together the mayonnaise and yogurt with enough water to make it a thin dressing like consistency. Drain the fruit and vegetables and mix all the ingredients together.
