Mango Rice Pudding


Snooping around various food blogs on the internet a couple of days ago, I came across this recipe from Brunei – slightly adapted to fit in with the Slimming World Plan. We both found it absolutely delicious, and it is set to become a firm favourite whether dieting or not. I think next time I will try using the fat free coconut yogurt rather than the quark for a change.



Serves 2
Syn Free on Extra Easy

a couple of handfuls of arborio rice
sweetener to taste
vanilla essence
a tub of quark
sweetener to taste
1 mango, diced

Boil the rice for 15-20 in water with added sweetener and vanilla essence until just soft but still retaining a little 'bite'. Leave to cool.

Meanwhile mix the quark with sweetener to taste and add the chopped mango. Mix with the cooked rice and sprinkle with a little cinnamon.
