Quinoa, Courgette and Feta Salad

Serves 2
Syn Free on Extra Easy*

* providing you use the cheese as your Healthy Extra B

75g quinoa
1 large courgette
4 spring onions, finely sliced
100 cherry tomatoes, halved
2 tbsp red wine vinegar
1 tbsp sweetener
1 red chilli, finely chopped
100g feta cheese, crumbled
small bunch parsley, chopped

Cook the quinoa according the packet instructions then drain and rinse under cold water. Thinly slice the courgette lengthways using a mandolin or potato peeler. Whisk together the vinegar, chilli and sweetener.

Place all the salad ingredients in a bowl and stir in the dressing.

Serve with grilled meat or on its own. I topped the salad with a grilled peppered beef steak from Joe's sausages – cooked for a few minutes each side on a high heat.
